Job Description

1.Im a competitive Cross country skier that trains 6 days a week so I consume what I imagine is more than the normal portions. 2.Im not a vegetarian although I prefer to eat large quantities of varied vegetables at every meal and I am certainly not opposed to a completely plant based meal at times.3.I definitely eat only organic meat. I would say chicken is a staple and red meat (lean cuts flank steak, filet mignon etc) is fine once or twice per week. Pork and turkey are also fine, but I am not a fan of duck. Also, I dont eat internal organ meat of any kind. 4.Seafood is also a staple wild caught or sustainably farmed if necessary. Shrimp (and other crustaceans) is a favorite along with white meat more delicate fish (sole, halibut, branzino, cod and others). Salmon is great as well. I try an limit the larger more toxic fish (limited tuna, no swordfish etc).5.I try and limit starches eating only healthy organic grains and healthy fats (olive oil is a staple). 6.I dont have any allergies.
